Pie filling: <\/em><\/p>\n1\/2 ltr water<\/p>\n
2 1\/2 cups vegan milk<\/p>\n
5 tbsp all purpose flour ( you can use oat flour instead as a thickener. If you’re using oat flour start with 5 tbsp, if the mixture isn’t thickening up add 1 tbsp at a time until you get the desired consistency)<\/p>\n
2 onions<\/p>\n
1 cup mushrooms<\/p>\n
pre cooked carrots<\/p>\n
pre cooked potatoes<\/p>\n
pre cooked sweet potatoes<\/p>\n
frozen green beans<\/p>\n
frozen green peas<\/p>\n
cinnamon<\/p>\n
salt<\/p>\n
nutmeg<\/p>\n
pepper<\/p>\n
garlic<\/p>\n
rosemary<\/p>\n
How to make the pie filling: <\/strong><\/p>\nIn a heated pan, place two tbsp of butter until it melts. Add the onions, spices, garlic and mushrooms stirring occasionally for about 5 minutes. Then add water. Add this point you can add in any herbs that you might have. In this video I used fresh rosemary. Let the water boil, then add the milk and flour whisking until you get a thick consistency. Once the mixture is thick you are going to add in all your pre cooked vegetables and finally the frozen vegetables. Add the white wine and stir. At this point go ahead and taste the pie filling and see if you need to add any more spices to make it more flavorful. Turn off the heat and now its time to get our dough from the fridge!<\/p>\n
Preparing our veggie pies: <\/strong><\/p>\nRoll out your dough and place it in your baking dish pressing the dough down on the bottom and sides of the dish. Then add in the pie filling. Finally roll out the dough once more and cover the top of the baking dish with dough. Seal the sides of the pie. Cut 4 small slices in the center of the pie and then brush the top of the pies with olive oil or vegan butter. Bake at 160 degrees celcius for 30 minutes.<\/p>\n
Notes:<\/em> since oat flour is gluten free this dough will be gluten free, which means that it is likely to crack and won’t roll out perfectly. Don’t worry about it!
