These bread rolls are specifically used to make Vada Pav which I will make very soon! These Ladi Pav breads are so delicious, and they are really soft and spongy! These are a traditional Indian street food bread from Mumbai. Btw, keep in mind that the Ladi Pav should be stored in an airtight container, and will remain fresh for 1-2 days. It’s better eaten on the same day it is baked.

Ingredients:

750g all purpose flour plus 2 tbsp after the first rise of the dough.

2 tsp dry active yeast

6 tbsp sugar

3 tbsp coconut milk powder

500ml warm soy milk

Salt 2 tsp

5 tbsp vegan butter plus more for greasing the baking tray.

Directions:

1. Warm the milk, Add the sugar, yeast. Mix well and keep aside for 10 minutes.

2. Add the flour, salt, and milk powder to a bowl. Mix well and make a well in the center.

3. After 10 minutes the yeast mixture should look frothy(see video. If it doesn’t look frothy then you should throw it away and try again as perhaps the milk was to hot or too cold.) after 10 min add the frothy yeast mix to the flour mixture and mix with a spoon and then with hands for 2 min. It will be super sticky.

4. Now add the butter to the sticky dough and start kneading and don’t stop for 15 min. It will turn from sticky dough to a dough that is more firm but still sticky. During the 15 minutes of kneading the dough is when the gluten will form.

5. DO NOT add any flour or anything while kneading, It will not be soft if you add anything while kneading.

6. After 15 mins of kneading, transfer this dough to a big bowl, cover with tea towel and keep aside for 45 mins to one hour.

7. It will double in volume after one hour, take some flour, dust your hands and punch down the dough. Add 2 tbsp of flour And knead. Dont add too much flour otherwise the bread will not be that soft.

8. Take a small portion of dough and roll it between your hands and make a ball. EaCh ball of mine was 60grams. Now place them into a 12”round cake tray that is greased with butter.

9. Keep the dough balls very close touching each other. Otherwise they wont rise up, but rise sideways and become flat.

10. Now cover once again with a tea towel and keep aside for another 40-45 mins.

11. Preheat your oven to 200 degrees Celsius for 10 minutes.

12. After 45 minutes, brush the pav gently with milk. Gently place the cake tin in the oven and bake for 15 minutes at 200 C.

13. If the buns don’t look brown, bake for some more time. Take them out immediately and brush the top part with butter. Keep aside till they cool!
