Super healthy vegan oat cake recipe!
Put three cups of oats in the food processor along with one or two tablespoons of cinnamon and process until you get a flour consistency. Place into a bowl and set aside. Take cranberries, dates, pecans and put them into the food processor and process until finely chopped. Set aside. In the bowl of your oat flour and cinnamon, add the almond milk, vanilla extract, melted coconut oil and mix until incorporated, then add the cranberries, dates, pecans and knead with your hands until you get a dough like consistency. Finally sprinkle the remaining 2 cups of whole oats (not oat flour) into the mixture and knead once more until mostly incorporated. Shape the dough into small, round but thick oat cakes and place on baking paper. Bake in the oven for 17 minutes at 150 degrees. Enjoy!

3/4 cup of almond milk
2 cups medjool dates
2 cups dried sugar free cranberries
2 tbsp vanilla extract
5 cups of oats
4 tbsp melted coconut oil
1 cup of pecans
