VEGAN CRUNCHY CHOCOLATE CEREAL

VEGAN CRUNCHY CHOCOLATE CEREAL

Ingredients:

10 pitted dates

1 cup shredded coconut

3/4 cup raw cacao powder

1 1/2 cup activated buckwheat groats

1 1/2 cups puffed quinoa

1/4 cup maple syrup or date syrup or agave nectar

2 tbsp coconut oil

Steps:

To activate your buckwheat groats place 1 1/2 cups of buckwheat in warm water. Put enough water in the bowl to cover the buckwheat completely. Add 1 tbsp apple cider vinegar. and stir. Cover the bowl with a clean kitchen cloth and let that sit for 20 minutes. After 20 minutes discard the water and let the buckwheat sit on your kitchen table covered with a cloth for 24 hours, watering and discarding the water 3 times in the day. You may notice your buckwheat will begin to grow a tail or start to sprout. That’s good! It means it’s activated. Once your buckwheat is activated you can go ahead and make this vegan chocolate cereal!

To your food processor add the dates, coconut oil, and choice of sweetener. Process until smooth and creamy. Set aside. In another bowl combine the puffed quinoa, activated buckwheat, raw cacao powder and stir. Now simply poor the date mixture we made in the food processor into the bowl and mix all the ingredients together with your hands making sure that the wet ingredients completely cover the dry. Place the mixture on a tray lined with parchment paper and with your hand or spatula evenly flatten out the mixture. Bake at 120 degrees Celsius for 20 minutes. Remove from the oven and break the mixture into chunks. Place back in the oven for another 20 minutes. Remove and let it cool and enjoy it with milk!
